3/4 cup of (preferably unsweetened) coconut or almond milk (or any other variety of non-dairy milk you might prefer such as hemp, cashew, sunflower or hazelnut)
1 heaping tsp of matcha powder (if you don't have matcha on hand, you can use 2 green tea bags)
1/8 tsp of real vanilla extract or a pinch of raw vanilla
1/4 cup boiling water
A few (fresh!) mint leaves, or 1/8 of a tsp of peppermint extract
For extra yumminess + energy, you can also add a drizzle of maple syrup to taste and/or a spoonful of coconut oil or MCT
Instructions:
1) Warm 3/4 cup of your fave non-dairy milk in a small pot over low to medium heat
2) Whisk your matcha powder, vanilla with the freshly boiled water in a mug. Or if you don't have matcha on hand, let 2 green tea bags steep in the mug for a couple of minutes.
3) When hot, whisk or stir the 'milk' into the matcha tea mixture in the mug (or into the steeping green tea).
4) Add a handful of mint leaves or stir in peppermint extract. (I like to drink my MM Latte with the leaves in for extra flavour, but you can take them out if you prefer)
Optional: Add a little bit of maple syrup to sweeten and/or stir in your coconut oil or MCT.
In the summertime when I need something cold and refreshing, I just pile these ingredients into my blender and add 4 ice cubes instead of adding water. For an extra hit of plant-powered protein, add a few slices of avocado, and a spoonful of sunflower butter.
